2016 Three Saints Cabernet Sauvignon
VINTAGE In many ways 2016 was a classic vintage. Throughout the growing season we had seasonal marine layers which promoted a Santa Barbara classic long, cool, ripening period. While the California drought had yet to be busted in Santa Barbara County, promoting another early bud break and therefore an earlier harvesting period, the rest of the season was “normal.” We believe this highlights the advantages of Happy Canyon of Santa Barbara: early season water deficits that promote concentration, texture, and complexity
WINEMAKER NOTES The Three Saints Cabernet Sauvignon is intended to represent a softer side of Happy Canyon of Santa Barbara AVA. Vineyard parcels from richer soils make up the majority of this wine, providing fruit that is both juicy and attractively pleasing. Maceration times are kept a bit shorter (along with a kiss of Merlot!) so tannins remain soft and approachable.
TASTING NOTES True to varietal Cabernet Sauvignon with notes of fresh herb, perhaps sage, that is common to Happy Canyon, but with plenty of sweet red and blue fruits that give the wine generous and open aromatics. The texture strikes a nice balance of seriousness, hinting to its quality sourcing, and softness, making it the perfect wine for availability in its youth.
